Yes, the Saturn V doesn't ignore aerodynamics (the rocket still needs to get through the atmosphere), but there is an important distinction: Those are control surfaces, they provide no lift, unlike the wings on a plane. Directional control can also be done by altering the direction of thrust, for instance, see the
DC-X.
