Anyway, for dinner, ocean perch(redfish) fillet, with a sauce made of the last of the preserved tomatoes[1] from last summer, sliced leeks, garlic, mushrooms, some concentrated tomato paste and cream, with pasta fusili.
All layered in a big pot with mozzarella on top and baked lasagna-style in the oven.
Yummy.

1) Whole peeled tomatoes together with some garlic, chili peppers, laurel leaves, salt, pepper, sage, rosemary and thyme are stuffed tightly in a big glass, which is then filled with mixed vinegar and olive oil.
With the lid screwed half on, put in the oven in a big pan of water, at 120C for 1.5 hours, take out and immediately tighten lid.
Will keep until you've eaten all, which takes shorter than you'll think. Make lots.
Works with both red and green tomatoes.

These are the kind of threads that I understand the least. Maybe it's because I don't see the point in blogging, and associated behaviour, but quite frankly I couldn't care less what anybody here had for dinner, and I fail to see why anybody might be interested in my (delicious, as it happens!) dinner. Sharing recipies, etc, yes, I can understand that. Is this a cultural thing? I'm not meaning to be rude, and I apologise if if comes across that way.

It's about community. Would you ask your neighbor how his children are doing? Or his sick parent?

Neverfly is right, it's about the little things.

It is like sharing recipes, only in the more general sense of sharing food culture rather than recipes for individual dishes, though from the descriptions I could probably recreate at least half the dishes described as well

Our planned Valentine's Day dinner menu...

Pane di Como with balsamico dipping oil — This is actually leftover from earlier in the week. The dipping oil is EVOO, balsamic vinegar, coriander, marjoram, cracked mixed pepper, and salt.

Pan-seared Alaskan sea scallops with white wine reduction — I plan to treat the scallops simply with salt & pepper and a quick sear in a little butter and EVOO. White wine will deglaze the pan and reduce with a couple of sprigs of lemon thyme, to be finished with a pat of butter.

Angel hair pasta primavera — with broccoli, baby zuchinni and yellow squash, sun-dried tomatoes, and fresh-grated Romano.

Açai berry sorbet — with fresh berries and whipped cream

Wine selection— Chateau Ste. Michelle 2006 Columbia Valley Muscat Canelli or Schmitt Söhne 2005 Kabinett Reisling (whichever strikes our fancy at the moment)

I'm hoping there will be some leftover pizza. I made dough over the weekend and put half in the refigerator and forgot about it. Pulled it out last night and it looked very spongy, but rolled out nice and had just a hint of sour. Grated on some mozza and a handful or parmesian.

Tonight was chicken fried steak, french fries, cream gravy and a nice fresh salad. Oh, can't forget the Texas toast. I'll have to swim two miles in the morning to make up for it.

When I'm in Texas I have to have chicken-fried steak.

The Hitchin' Post in Ozona has one of the best I've ever had.

I made tostadas,I fry the tortillas (yellow corn,of course, made locally) then slather 'em with the beans I cooked & mashed the day before, the fried elkburger & some grated cheddar/Jack cheese, under the broiler 'til the cheese melts, topped 'em with sour cream, lettuce & tomato, green chile sauce for her & Sadie's Salsa for me.

Tonight was an ersatz State of Maine Italian sandwich (just an "Italian" Down East):

One long, small diameter soft demi-baguette with a 90 degree wedge cut out of the top. Have to compromise here since real Italian sandwich rolls aren't available outside the State of Maine and parts of New Hampshire.

Then slices of white American cheese, boiled honey ham, tomato, green pepper, yellow onion, sour pickles, and halved oil-cured olives, covered with olive oil and white vinegar, salt and pepper, then wrapped in wax paper, secured with an elastic, and allowed to sit for about two hours.

Then the grand opening and yeehah! You betcha!

The above is for what some Portlanders call a "regular" Italian. Often I'll get out the salami and provolone and make what they call a "real" Italian.

Either one is a real treat.

Rainy weather, so my better half sent me out for the main ingredient. Found the shrimp man parked where he always parks, and traded him $20 for about three 'straight from the gulf' lbs of HUGE shrimp (haha). Returned home, fired up the grill and skewered those babies along with chunks of potato, onion, assorted peppers, marinated sirloin steak and her special basting sauce.

Steak and Shrimp kabobs, absolutely delicious. Washed it down with some ice-cold Shiner Bock. It doesn't get much better in my world.

I can't agree at all. Barring all the seafood meals, the ideas are helpful. Creative cooking is not in my nature and any attempt to vary from a strict recipe has left me crying and hungry. I stick to the basics and can only eat pasta so many nights a week. I have taken a lot of suggestions for new meals here. Much appreciated!

I have to have one occasionally no matter where I go. Love chicken fried steak. Even a mediocre one is a treat. When travel I try them at whatever local (non-chain) eatery I can. Even the one they used to serve at Applebees was pretty good. They used to also have chicken fried chicken. Even though it is no longer on the menu, they still make it for me when I go in and ask nice. That's great service.

Curried tofu with mango & apples. I made up the recipe but it's heavily influenced from my Indonesian grandmother's cooking. I can post up full instructions if anyone wants (for you non-vegetarians I'll bet it would be good with chicken.)

that sounds good!

Mom invited me to dinner tonight, so I'll meet her somewhere.

After this weekend though I'm getting back to cooking.

Me too kinda. We had some beautiful little Filet Mignon and skewered shrimp. I baked some potatoes and steamed broccoli. Yep, good stuff.

Looks very nice Jay200MPH.

This isn't dinner, but mine is a left over prawn curry with rice from last night with some assorted poppadoms. Not exactly glamarous looking like the other pics in here, but it's really nice.

we are eating too much vegitables in our daily dinner, doctor suggest us to take by this way, hence we have started since a last week to take more green vegitables in the dinner, doctor said that green vegitables are good to receive iron, and other vitamins through it, hence we are eating the same.

secondly since last 2 months we are eating a granuels food in our lunch, since doctor said that the granuels is very easy to swallow or chew, and it is useful to prevent the natural decay in the teeths, because the powder based (like vheat powder which is mostly used in the chapatis) is not too good to eat frequently because it is supporting when it grind in the teeths going in the gums lightly, and hence doctor suggested to take the granuels food.

Thirdly we are frequently eating large number of fruits, though the fruits are seasonal but we are purchasing and eating the same, as it is available in the market.

Fourthly going normal. Health and stamina (to do the homeworks and the outings) also going good one(to complete the office works and other assignments) . But except (writing).

A very good series running currently on Discovery Health, with episode titles like How To Be Slim, How To Be Healthy, etc. Good stuff, debunking most of the popular diets, going to great lengths to advocate fruits and veggies, as well as exercize. Pretty straightforward and well grounded approach, so not something the "But I'm big-boned" or the "But I have low metabolism" crowd wants ro hear.
