Default Post your dinner

This was good :biggthumpup;

Stuffed peppers

First some spicy pork sausage


Then some beautiful Poblanos





Queso Fresco. It's straight from Mexico and a little different. Turns out it doesn't melt like normal cheeses. Also Cumin for Mexican flavor. You can see my new favorite "soda" no caffeine however. Apple flavor, but really it reminds me of cream soda


Into the oven


And dinner! Very good and just enough spicy.

1/2 M&M's Shepherd's pie (really yummy & only needs ability to work oven switches). One can (500 ml) Warsteiner beer. One apple raw, unpeeled; (core, pips & all as always -- what joy to chew the pips). One orange raw (peeled ). Handful raw bluberries from Chile.

Well I intended on making my version of pepper steak; stirfry beef and chopped up peppers, simmered in gravy then served over white rice. Sadly, after I began cooking, I learned I forgot to get a key ingredient, peppers. So, I just called it beef tips n gravy, over rice, added a side salad to clear up the guilt of a no veggie dinner, and all was well.

Not for me...for my kids. I, personally, wouldn't think twice about skipping veggies for enternity, but on my children's plates, barring caserole's, there is a meat or poultry, a side (rice, potato, etc), and a veggie, the veggie always being a bigger serving than the starch. It's just the way I was raised. don't give me the same hard time that my hubby does, taters are great but they can be more of a starch then a veggie according to Weight watchers. The same goes for corn; corn will never be served as the veggie.

That reminds me of an conversation that resently took place at our dinner table. My seven year old boldly states that she is a vegetarian because it is mean to kill animals, to which I replied, "swallow your steak before you talk please."

Quick batch of chili I made 2 days ago: Fried chopped onion and Roma tomatoes with a good ground sirloin. Seasoned with salt, pepper, 1/2 tsp beef boullion, powdered onion, powdered garlic, mild curry powder.

Stirred in 14 ounces of tomato sauce, 12-ounce can of pinto beans (drained), 1/2 cup shredded cheddar cheese.

Yum!

Someone mentioned corn bread today, and someone else asked what Chicken Fried Steak was.





I got my ingredients together for the corn bread. Preheated the oven AND skillet (cooks better that way) and poured them in.

and then the Chicken Fried Steak. I must admit the batter turned out less than expected, and I used hamburger meat (poor man's CFS), but overall it tasted good and filled my belly.

Crosscountry, I see by your picture of ingredients that you are from the south half of Texas.

Tonight, I went with macaroni and beer sausage (from the nearby HEB store) with creamed tomatoes and chili spices.

I've had girlfriend trouble over the years, when for some reason they thought they could go after my cast iron skillets with soap, dishwashers and (horrors) S.O.S. pads.
How many times that years of seasoning went down the drain...
Solution usually was to hang them on the rack or put them in the cupboard higher than they can reach.
Usually when they can't reach it- they won't bother.


Interesting cornbread, I have always included sugar in the ingredients (California corn cake) but I think that would clash with jalapeños and cheese...

Personally, I have never been a fan of cube steak- Hamburger probably would be a better choice.

Tonight:

Alaska King Crab legs & claws, about 1 lb, dipped in hot butter, with french fries, all heavily salted. Very good for your mental health anyway.
1/2 bottle New Zealand Mount Riley Chardonnay.

Strawberry & blueberry fresh fruit salad.

Why the feast? Found the crab in my freezer, thought had eaten it all before Xmas.

Still smiling at the memory, 6 hours later. So is my dog, she got to lick up the remains of the crab&butter&salt.

btw I never use salt otherwise than on crab & lobster. My wife, who salts all her food everywhere she goes, before even tasting it, never uses salt on crab or lobster. Go figure. And oh, yes, she had her 1 lb of crab too, but drank her own plonk, not wanting to break her ABC rule = Anything But Chardonnay.

Hippie casserole. AKA hobo casserole, one pan casserole, no bake casserole.

Two boxes Mac&Cheese (Kraft or house brand). Prepare as on box.
Four ounces Velveeta (for extra gooeyness).
One 10.5 ounce can of Cream of Mushroom soup.
One 12 ounce can Tuna (packed in water) drained.
One 14 ounce can Sweet Peas drained.

Boil and drain macaroni. Add cheeses, soup, tuna, and peas. Stir well. Simmer over low heat until warm. Feeds me for a couple of days!

this was hamburger, but a well tenderized cheap cut sounds better.

Tonight it was simple: Pork Chops pounded down flat, coated with flour, fried in olive oil. Added green beans and whole kernel corn, both boiled in butter.

I usually like lots of vegetables with my meal, or sometimes just use all vegetables. However, King Crab Legs are my favorite meal.

Garlicky cream of celery soup, Poljun red beans and rice, both homemade, and three raw Apalachicola oysters with lemon and Tabasco.

This was followed by my own special Old Fashioned recipe, made from standard ingredients, but with a touch of toasted and freshly ground cumin, and allowed to sit for a half hour, which ensures the permeation of the flavor of cumin through the rye.

I said "a feast" didn't I?
Bought it when it was on sale here, $19.99 Canadian for 2 lbs (for a bag of 1.36 Kgm actually). Far cheaper here than beef weight for weight, but of course you throw away +/- half the weight, so really only get about 1 lb edible, if that. Sure it's expensive, so eat it 1 or 2 times a year. Usual price in season is about $29.00 for a bag.

1 Can of corn.
1 slice of onion
1 slice of green pepper
1 bit of garlic
5 mushroom

Cook in a skillet until water is gone and it begans to fry.

That and pancake skillet fried pork with some likewise fried french bread.

A busy day and very utilitarian eats:

5 PM - 2 egg salad sandwiches on rye.
8 PM - 1 sports venue hot dog.
10 PM - a few handfuls of dry roasted peanuts and lots of lemonade.

Some days, that's the way it goes. Tonight though, honey is making her signature dish - meatloaf.
